Ingredients

  • 1 cup old-fashioned rolled oats (certified gluten-free if needed)

  • 1 medium overripe banana

  • 1/2 cup unsweetened almond milk (or milk of choice)

  • 1 tbsp pure maple syrup

  • 1/2 tsp baking powder

  • 1/2 tsp pure vanilla extract

  • 1/2 tsp ground cinnamon

  • A pinch of sea salt

  • 1/2 cup fresh or frozen blueberries

Directions

  • Preheat your oven to 350°F (175°C) and lightly grease two small oven-safe ramekins (8 oz each) or one small baking dish with coconut oil or non-stick spray.
  • In a high-speed blender, combine the rolled oats, overripe banana, almond milk, maple syrup, baking powder, vanilla extract, ground cinnamon, and a pinch of salt.
  • Blend on high speed for 30–60 seconds until the oats are completely pulverized and the batter is incredibly smooth, creamy, and thick.
  • Pour the blended oat batter into your prepared baking dish(es).
  • Gently fold the blueberries directly into the batter, reserving a few extra berries to sprinkle on the very top for a beautiful presentation.
  • Bake in the preheated oven for 25–30 minutes. You will know they are done when the edges pull away slightly from the sides of the dish, the top looks set and golden, and a toothpick inserted into the center comes out mostly clean.
  • Remove from the oven and let cool for 5 minutes (the inside will be extremely hot). Serve warm, optionally topped with a drizzle of almond butter or a splash of cold milk.

Notes

  • No Banana? No Problem: If you don’t like bananas, you can substitute the banana with 1/2 cup of unsweetened applesauce. Your baked oats will still be fluffy and delicious, with a slightly more autumnal apple-cinnamon flavor!
  • Texture Tip: Blending the oats is the secret to getting that perfect “cake” texture. If you don’t have a blender, you can just mix the ingredients in a bowl, but the result will be more like a traditional baked oatmeal casserole rather than a fluffy cake.
