Ingredients

  • 1/2 cup old-fashioned rolled oats (certified gluten-free if needed)

  • 1 cup unsweetened almond milk (or milk of choice)

  • 1/2 medium banana, thinly sliced or mashed

  • 1 tbsp chia seeds or ground flaxseed

  • 1/2 tsp ground cinnamon

  • 1/2 tsp pure vanilla extract

  • 1 pinch of kosher salt

  • 1 scoop (about 30g) of your favorite vanilla or unflavored protein powder

  • Fresh berries and nut butter (for topping)

Directions

  • In a small saucepan, combine the rolled oats, unsweetened almond milk, sliced banana, chia seeds, ground cinnamon, vanilla extract, and salt.
  • Place the saucepan over medium-high heat and bring the mixture to a gentle boil.
  • Reduce the heat to medium-low and let the oats simmer for 5–7 minutes, stirring occasionally. As it cooks, the banana will begin to melt into the oats, creating a naturally sweet and creamy base.
  • Once the oatmeal has thickened and absorbed most of the liquid, remove the saucepan from the heat.
  • Allow the oats to cool for about 60 seconds (this prevents the protein powder from clumping from extreme heat).
  • Add the scoop of protein powder and stir vigorously until it is completely dissolved and the oatmeal is velvety smooth. If the mixture is too thick, stir in an extra splash of milk.
  • Transfer the protein oatmeal to a bowl, top with fresh berries and a drizzle of nut butter, and enjoy immediately.
