1/2 tsp cumin seeds (jeera)
1 tsp urad dal (split black gram)

1 green chili, finely chopped
1/2 inch piece of fresh ginger, grated
1/2 medium onion, finely chopped
1/2 cup mixed vegetables (carrots, green peas, and bell peppers), finely chopped
1/4 tsp turmeric powder
1/2 tsp salt (adjust to taste)
1 1/2 cups hot water
Fresh coriander leaves, chopped (for garnish)
1/2 lemon, juiced
Directions
- Place a dry skillet over medium heat and add the rolled oats. Dry roast them for 3–4 minutes until they become slightly crisp and aromatic. Transfer the roasted oats to a plate and set aside.
- In the same skillet or a deeper pan, heat the oil or ghee over medium heat. Once hot, add the mustard seeds and let them splutter.
- Add the cumin seeds and urad dal. Sauté for about 30 seconds until the dal turns a light golden brown.
- Carefully toss in the fresh curry leaves, chopped green chili, and grated ginger. Sauté for a few seconds until fragrant.
- Add the finely chopped onions and cook for 2–3 minutes until they turn soft and translucent.
- Stir in the mixed vegetables (carrots, peas, bell peppers), turmeric powder, and salt. Sauté for 2 minutes, then pour in a splash of water, cover the pan, and let the veggies steam for 2–3 minutes until tender.
- Pour in the 1 1/2 cups of hot water and bring the mixture to a rolling boil.
- Gradually add the roasted oats into the boiling water while stirring continuously to prevent any lumps from forming.
