Origin Pulao Recipe | Veg Pulao Recipe
Tracing its roots back through centuries of Persian and Indian culinary history, pulao (or pilaf) began as a celebratory dish where meat, rice, and whole spices were cooked together in broth. Over time, as it spread across the Indian subcontinent, it naturally evolved into various localized, plant-forward versions, becoming a staple in modern households for its sheer convenience and adaptability. A key component of achieving that authentic, aromatic profile is the traditional tempering of whole spices in hot oil or ghee. Exploring the health benefits of cardamom—a star ingredient in the dish that aids digestion and fights inflammation—showcases how ancient culinary traditions seamlessly integrate powerful, functional nutrition into everyday comfort food.

It is the ultimate low-stress meal for when you are completely exhausted after a long day of debugging code, as it comes together in just one pot with virtually no cleanup. Plus, taking a moment to understand the health benefits of ghee, which is loaded with fat-soluble vitamins and healthy fats, gives you the perfect excuse to finish off your steaming bowl of pulao with a generous, rich drizzle right before serving.

kcalIngredients
1 cup basmati rice, rinsed and soaked for 20 minutes
1 1/2 tbsp ghee (or peanut oil for a vegan option)
1 bay leaf (tej patta)
2–3 green cardamom pods, lightly crushed
1-inch cinnamon stick
3–4 whole cloves
1 tsp cumin seeds (jeera)
1 medium onion, thinly sliced
1 tsp ginger-garlic paste
1 green chili, slit (optional, for heat)
1 1/2 cups mixed vegetables (carrots, green peas, French beans, and potatoes), diced
1/4 tsp turmeric powder
1/2 tsp garam masala
1 tsp salt (adjust to taste)
1 3/4 cups water
Fresh coriander leaves, chopped (for garnish)
Directions
- Wash the basmati rice gently under cold water until the water runs clear. Soak the rice in a bowl of fresh water for 20 minutes. Drain completely and set aside.
- Heat the ghee or oil in a heavy-bottomed pot or pressure cooker over medium heat.
- Once the ghee is hot, add the cumin seeds, bay leaf, cardamom pods, cinnamon stick, and cloves. Sauté for 10–15 seconds until the whole spices sizzle and release their aroma.
- Add the thinly sliced onions and sauté for 4–5 minutes until they turn a light golden brown.
- Stir in the ginger-garlic paste and the slit green chili. Sauté for 1 minute until the raw smell of the garlic disappears.
- Toss in the mixed chopped vegetables, turmeric powder, and salt. Cook everything together for 2–3 minutes, allowing the vegetables to slightly soften and absorb the spiced fat.
- Add the drained basmati rice to the pot. Stir very gently to coat the rice grains with the ghee and spices, taking care not to break the fragile soaked grains. Roast the rice for 1 minute for a fluffier texture.
- Pour in 1 3/4 cups of water and sprinkle the garam masala over the top. Stir gently to combine.
- Bring the water to a rolling boil.
- Stovetop Method: Once boiling, reduce the heat to the lowest setting, cover the pot with a tight-fitting lid, and let it simmer undisturbed for 12–15 minutes until the water is completely absorbed.
- Pressure Cooker Method: Secure the lid and cook on medium heat for exactly 2 whistles. Turn off the heat.
- Allow the pulao to rest off the heat for at least 10 minutes (do not open the lid or release the pressure early). This resting period prevents the rice from getting mushy.
- Gently fluff the rice with a fork, garnish with fresh coriander, and serve hot.
Notes
- The Secret to Fluffy Rice: Soaking the basmati rice for at least 20 minutes is non-negotiable. It helps the grains expand to their maximum length and ensures they do not stick together while cooking.
