Ingredients

  • 1 tbsp extra-virgin olive oil

  • 1 medium yellow onion, finely diced

  • 1 large red bell pepper, seeded and diced

  • 3 cloves garlic, minced

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • 1/4 tsp chili powder (optional, for a spicy kick)

  • 1 can (28 oz) crushed tomatoes (or whole peeled tomatoes, crushed by hand)

  • 4 to 6 large eggs

  • Salt and freshly ground black pepper to taste

  • Fresh cilantro or parsley, chopped (for garnish)

Directions

  • Heat the olive oil in a large skillet (preferably cast iron) over medium heat. Add the diced onion and red bell pepper, and sauté for 5–7 minutes until the vegetables are softened and the onions are translucent.
  • Stir in the minced garlic, ground cumin, smoked paprika, and chili powder. Cook for 1 minute until the spices are deeply fragrant.
  • Pour the crushed tomatoes into the skillet. Season generously with salt and black pepper. Reduce the heat to medium-low and let the sauce simmer gently for 10 minutes so the flavors meld and the sauce slightly thickens.
  • Using the back of a spoon, make small “wells” or indentations in the simmering tomato sauce. Carefully crack one egg into each well.
  • Cover the skillet with a lid and cook for 5–8 minutes, or until the egg whites are just set and the yolks are cooked to your desired level of runniness.
  • Remove the skillet from the heat. Garnish generously with chopped fresh cilantro or parsley and serve immediately directly from the pan.
