  • 1 large green apple (Granny Smith), cored and roughly chopped

  • 1/2 large English cucumber, chopped (leave the skin on)

  • 1 tbsp freshly squeezed lemon juice

  • 1/2 inch fresh ginger root, peeled

  • 1/2 cup cold coconut water (or filtered water)

  • 1 cup fresh baby spinach (optional, for a brighter green color)

  • 1/2 cup ice cubes

Directions

  • Add the chopped cucumber, coconut water, peeled fresh ginger, and freshly squeezed lemon juice to the pitcher of a high-speed blender.
  • Blend these initial ingredients on medium speed for about 20 seconds to completely break down the ginger and create a liquid base.
  • Add the chopped green apple and fresh baby spinach (if using) to the blender.
  • Blend on high speed for 60 seconds until the mixture is silky smooth and no chunks of apple or cucumber remain.
  • Drop in the ice cubes and blend for a final 20–30 seconds to thoroughly chill the smoothie and give it a frosty texture.
  • Pour immediately into chilled glasses and serve ice cold.
