1/2 lb turkey breakfast sausage (bulk or casings removed)
2 cups fresh baby spinach or kale, roughly chopped
2 large eggs
1/2 medium avocado, sliced
1/4 cup cherry tomatoes, halved
1 tbsp extra virgin olive oil (divided)
Kosher salt and freshly ground black pepper to taste
Directions
- In a small saucepan, combine the rinsed quinoa and the chicken broth. Bring to a gentle boil, then reduce the heat to low, cover, and simmer for 15 minutes until the liquid is fully absorbed and the quinoa is fluffy.
