Tofu Scramble

Hearty, savory, and incredibly easy to customize, a classic Tofu scramble is the ultimate plant-based alternative to morning eggs. Packed with protein and seasoned with turmeric for that iconic golden hue, it is a quick, nourishing breakfast that comes together in a single pan. Incorporating a high-protein Tofu scramble into your weekly meal plan guarantees a satisfying, savory start to your day with practically zero effort.

Origin Tofu Scramble

The concept of scrambling tofu originated within the early vegan and macrobiotic movements of the 1970s as a clever, wholesome way to replicate the texture and nutritional profile of scrambled eggs. By crumbling pressed tofu into a hot skillet with savory spices, home cooks created a surprisingly convincing and delicious egg substitute. Exploring the evolution of a great Tofu scramble shows how traditional Asian soy products have been brilliantly adapted to recreate classic Western breakfast dishes.

Ingredients

  • 1 block (14 oz) firm or extra-firm tofu, drained

  • 1 tbsp olive oil or vegan butter

  • 2 tbsp nutritional yeast

  • 1/2 tsp ground turmeric (for the yellow color)

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp kosher salt (or Kala Namak for an “eggy” flavor)

  • 1/4 tsp freshly ground black pepper

  • 2 tbsp unsweetened plant-based milk (optional, for creaminess)

Directions

  • In a small bowl, whisk together the nutritional yeast, turmeric, garlic powder, onion powder, salt, and black pepper.
  • Heat the olive oil in a large non-stick skillet over medium heat.
  • Crumble the drained block of tofu directly into the skillet using your hands or a potato masher, leaving some larger chunks intact for a varied texture.
  • Sprinkle the prepared spice mixture evenly over the crumbled tofu. Stir well to ensure the tofu is fully coated and turns a vibrant, even golden color.
  • Cook for 5–7 minutes, stirring occasionally, until the tofu is heated through and any excess water has cooked off.
  • For a softer, creamier texture, pour in the unsweetened plant-based milk and stir for 1 additional minute until the liquid is absorbed.
  • Remove from the heat and serve immediately alongside fresh fruit, roasted potatoes, or whole-grain toast.

Notes

  • The “Eggy” Flavor Secret: For a remarkably authentic egg-like flavor and aroma, substitute the kosher salt with Kala Namak (Indian black salt), which has a naturally sulfurous taste.
  • Vegetable Add-Ins: Sauté diced onions, bell peppers, mushrooms, or handfuls of fresh spinach in the skillet for 3–4 minutes before adding the crumbled tofu to easily boost your vegetable intake.
