Origin Fish Curry
Fish curries hold a revered spot in the coastal culinary traditions of the Indian subcontinent, from the Malabar coast of Kerala to the shores of Bengal. Historically, regional home cooks utilized the daily fresh catch and balanced the rich, creamy coconut milk with sharp, acidic elements to create a perfectly harmonious broth. This specific recipe leans into the South Indian style by using tamarind to provide its signature sour punch. Taking a moment to explore the health benefits of tamarind which is loaded with magnesium, antioxidants, and anti-inflammatory properties highlights how ancient coastal cooking seamlessly integrated functional, medicinal ingredients into everyday comfort food.
Why I Love This Recipe
I love how quickly this dish goes from the stovetop to the table. Unlike tough cuts of meat or heavy lentils that require hours of simmering or pressure cooking, fish cooks in mere minutes, making it the perfect restorative dinner when you are completely exhausted from debugging complex code all day. The spiced coconut broth is incredibly forgiving and serves as the perfect vehicle for a steaming bowl of basmati rice. Plus, once you master the simple trick of how to tell when fish is perfectly cooked—looking for an opaque center that flakes easily with a fork—you can confidently whip up this restaurant-quality seafood dish any night of the week.

kcalIngredients
1 lb (about 450g) firm white fish fillets (such as Tilapia, Cod, Halibut, or Surmai/Kingfish), cut into 2-inch chunks
2 tbsp coconut oil (or neutral cooking oil)
1/2 tsp black mustard seeds
1/4 tsp fenugreek seeds (methi)
1 sprig of fresh curry leaves (about 10-12 leaves)
1 medium onion, finely chopped
1 tbsp ginger-garlic paste
1 green chili, slit lengthwise
2 medium tomatoes, finely chopped or pureed
1/2 tsp turmeric powder
1 tsp Kashmiri red chili powder (for vibrant color without excessive heat)
1 tsp coriander powder
1 lemon-sized ball of tamarind, soaked in 1/2 cup warm water (extract the juice and discard the pulp)
1 cup full-fat coconut milk
1 tsp salt (adjust to taste)
Fresh coriander leaves, chopped (for garnish)
Directions
- Pat the fish pieces dry with a paper towel. Gently rub them with a tiny pinch of turmeric and salt. Set aside while you build the curry base.
- Heat the coconut oil in a wide, heavy-bottomed skillet or clay pot over medium heat. Add the mustard seeds and fenugreek seeds. Once the mustard seeds begin to splutter, immediately add the fresh curry leaves and slit green chili.
- Add the finely chopped onions. Sauté for 5-7 minutes until they are soft, translucent, and just beginning to turn golden brown.
- Stir in the ginger-garlic paste and cook for 1 minute until the raw smell disappears.
- Add the chopped tomatoes, along with the turmeric powder, Kashmiri red chili powder, coriander powder, and salt. Cook for 5-6 minutes, mashing the tomatoes slightly with the back of your spoon, until the mixture turns into a glossy paste and the oil begins to separate at the edges.
- Pour in the tamarind extract and 1/2 cup of water. Bring the mixture to a gentle boil and let it simmer for 3 minutes to cook off the raw tamarind flavor.
- Reduce the heat to low. Stir in the rich coconut milk, mixing well until the curry achieves a beautiful, uniform orange-yellow color. Let it gently simmer for 2 minutes (do not let it rapidly boil, or the coconut milk may split).
- Carefully slide the marinated fish chunks into the simmering curry in a single layer.
- Cover the pan with a lid and let the fish poach gently in the liquid for 5-7 minutes. Do not stir vigorously, as the tender fish will break apart; instead, gently swirl the pan by the handles if needed.
- Once the fish is opaque and flakes easily, turn off the heat. Garnish with fresh coriander leaves and serve hot.
Notes
- The Tamarind Substitute: If you do not have fresh tamarind on hand, you can substitute it with 1 tablespoon of store-bought tamarind paste, or stir in the juice of one large lemon right after taking the curry off the heat.
- Serving Suggestions: This rich, tangy curry demands to be eaten with a simple, neutral carb to soak up the broth. It pairs perfectly with steamed basmati rice, soft appams, or warm Kerala parottas.
