  • 1/2 lb (about 250g) fresh paneer, crumbled

  • 1 tbsp ghee or neutral oil

  • 1/2 tsp cumin seeds (jeera)

  • 1 medium onion, finely chopped

  • 1 medium tomato, finely chopped

  • 1/2 green bell pepper (capsicum), finely chopped (optional)

  • 1 green chili, finely chopped (adjust to taste)

  • 1/2 tsp ginger-garlic paste

  • 1/4 tsp turmeric powder

  • 1/2 tsp Kashmiri red chili powder

  • 1/2 tsp coriander powder

  • 1/2 tsp garam masala

  • 1/2 tsp salt (adjust to taste)

  • 1 tbsp fresh lemon juice

  • Fresh coriander leaves, chopped (for garnish)

Directions

  • Crumble the fresh paneer gently with your fingers. Do not mash it into a paste; you want it to retain a slightly chunky, scrambled texture.
  • Heat the ghee or oil in a wide skillet over medium heat. Add the cumin seeds and let them sizzle for 10-15 seconds until fragrant.
  • Add the finely chopped onions and sauté for 3-4 minutes until they become translucent and slightly golden.
  • Stir in the ginger-garlic paste and chopped green chili, cooking for 1 minute until the raw garlic smell disappears.
  • Add the chopped bell pepper (if using) and cook for another 2 minutes until it softens slightly.
  • Toss in the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook for 3-4 minutes, mashing the tomatoes slightly with the back of your spoon, until the mixture becomes a cohesive, glossy masala and the oil begins to separate.
  • Add the crumbled paneer to the skillet. Stir gently to coat the cheese evenly in the spiced masala.
  • Cook the paneer for just 2-3 minutes. (Do not overcook, or the paneer will become rubbery and dry).
  • Sprinkle the garam masala over the top and give it a final stir. Turn off the heat.
  • Stir in the fresh lemon juice and garnish generously with chopped coriander leaves. Serve hot.
