Baking a fresh batch of Low-sugar granola is an incredibly easy way to elevate your morning yogurt bowl while supporting steady, all-day energy.
Origin Low-sugar granola
The concept of granola dates back to the late 19th-century health movement in the United States, where it was originally created as a baked whole-grain cereal designed to promote wellness and digestion. However, as it gained commercial popularity over the decades, modern supermarket versions became heavily processed and loaded with refined sugars. Returning to its wholesome roots, this honors the original intention of the dish by relying on natural ingredients, healthy fats, and minimal sweeteners to deliver a truly nutritious breakfast option.
Why I Love This Recipe
I love how incredibly adaptable this recipe is—you can effortlessly customize the nuts, seeds, and warming spices based on whatever you happen to have in your kitchen cabinets. By using a whisked egg white (or aquafaba for vegans) to bind the oats together, you achieve those highly coveted, giant crunchy clusters without needing to rely on cups of sticky maple syrup or honey. Plus, having a large jar of freshly baked Low-sugar granola sitting on your counter means you are always just seconds away from a nourishing snack or a crunchy topping for your smoothie bowls.

kcalIngredients
2 cups old-fashioned rolled oats (certified gluten-free if needed)
1 cup raw mixed nuts (such as chopped almonds, pecans, or walnuts)
1/2 cup mixed seeds (such as pumpkin seeds, sunflower seeds, or chia seeds)
1 tsp ground cinnamon
1/2 tsp kosher salt
1/4 cup melted coconut oil or extra virgin olive oil
2 tbsp pure maple syrup (or a sugar-free alternative like monk fruit syrup)
1 tsp pure vanilla extract
1 large egg white, whisked until frothy (the secret for large clusters)
1/3 cup unsweetened coconut flakes (optional)
Directions
- Preheat your oven to 325°F (165°C) and line a large rimmed baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, mixed nuts, mixed seeds, ground cinnamon, and kosher salt.
- In a separate small bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract. Pour this wet mixture over the dry ingredients and stir well to coat evenly.
- In a small, clean bowl, briskly whisk the egg white until it becomes light and frothy. Pour the frothy egg white over the granola mixture and gently fold it in until everything is well combined and slightly sticky.
- Spread the granola mixture out onto the prepared baking sheet in a single, even layer, pressing down firmly with the back of a spatula to pack it together.
- Bake for 20–25 minutes, gently rotating the pan halfway through. If using unsweetened coconut flakes, sprinkle them over the top during the last 5 minutes of baking to prevent burning.
- Remove the pan from the oven and let the granola cool completely on the baking sheet without touching it (this undisturbed cooling process is what forms the large clusters). Once entirely cooled, break into chunks and serve.
Notes
- Vegan Alternative: To make this recipe completely plant-based, omit the egg white and substitute it with 2 tablespoons of aquafaba (the liquid from a can of chickpeas) whipped until frothy.
- Fruity Additions: If you love dried fruit in your granola, stir in 1/2 cup of dried cranberries, raisins, or chopped dried apricots after the granola has completely cooled. Baking dried fruit makes it tough and bitter.
