  • 4–6 large eggs

  • 1/4 cup fresh cilantro or parsley, roughly chopped (for garnish)

Directions

  • Heat the extra virgin olive oil in a large skillet (a cast-iron pan works best) over medium heat. Add the diced onion and red bell pepper, sautéing for 5–7 minutes until they are softened and lightly browned.
